D he loves to have a glass of cider now and then. The fact that the weakly alcoholic drink made from apples and/or pears but not only in the glass makes great, I'll show you today - because Cider is also a great ingredient in the fast kitchen. Tadaaaa!

I made a delicious recipe for the traditional English cider bulmers: there is a scoop of goat cheese with rosemary and bacon in cider vinaigrette. Sounds complicated? But it is easy and quick, promised! And the tart sweetness of pears and apples just goes great with savory and salty flavors like goat cheese, rosemary and bacon. (Bacon always goes ALWAYS). Served with a crunchy piece of bread or baguette nomnomnom.

And here comes the recipe for a delicious ball of goat cream cheese with rosemary and bacon in cider vinaigrette

Ingredients for 6 servings:

For the cream cheese ball
300 g of goat cream cheese
4 sprigs of rosemary and 100 g bacon slices
4-5 tablespoon bulbs premium cider pear
1 pinch of black pepper and 1 pinch salt of cling film

For the Cider Vinaigrette
100ml Bulmers Premium Cider Pear
2-3E Neutral Oil (ex Rape or sunflower)
2 tablespoons white wine vinegar
1 tablespoon maple syrup
salt & pepper
optional: a small hot pepper in rings

And otherwise
crispy baguette or bread to serve

And so it goes:

Pour the rosemary sprigs into a deep plate of boiling water and leave to infuse for 10 seconds (this is how the essential oils dissolve very well). Lift from the water, quench cold and pat dry. Chop the needles of two twigs very finely (about 1 good egg).

Slowly fry the bacon in a pan over medium heat until it is completely browned and crispy. Drain on kitchen paper and let cool. Then break into small pieces with both hands.

Mix the goat's cream cheese in a deep plate with rosemary, bacon, cider and salt and pepper using a fork. Cross two longer pieces of cling film and place the cream cheese in the middle. Put the ends of the foil together at the top and slowly twist until the cheese forms into a ball. Stir in the fridge for at least 1 hour.

Add cider, oil, vinegar, maple syrup, salt and pepper to a vinaigrette and put the remaining two sprigs of rosemary in it.Enjoy on crispy baguette or your favorite bread.
